Peel and cut potatoes into small dice. Put in water and put aside.
In a pan, add oil and sautee the onions, ginger and garlic.
Add the curry, and thyme and stir. Add the minced lamb and stir for a few minutes.
Add in the diced potatoes and water and cover and allow to cook till the potaoes are soft.
Add the frozen peas and carrots, stir for a few seconds and add in the bell peppers.
